Makuwa-Kuwa Pancake recipe
Ingredients (4 portions)
- 100grams Flour
- 20grams Baking Powder
- Pinch of salt
- 1 Egg
- 124ml Milk
- 10grams Butter
- 50grams Sugar
- Oil (small amount to cover bottom of pan)
Method
- Sieve the flour and salt in a bowl, make a well in the centre
- Add the egg and milk gradually incorporating the flour from the sides, whisk to a smooth batter
- Mix in the melted butter
- Heat the pancake pan, clean thoroughly
- Add a little oil, heat until smoking
- Add enough mixture to just cover the bottom of the pan thinly
- Cook for a few seconds until brown
- Turn and cook on the other side turn on to a plate
- Sprinkle with sugar. Fold in half then half again
Note: When making a batch of pancakes it is best to keep them all flat one on top of the other on a plate. Sprinkle sugar between each. Fold them all when ready for service, sprinkle again with sugar and dress neatly overlapping on a serving dish. Garnish with a lemon or orange wedge free of pips. Serve very hot, two per portion.
